Lentil and Brynza Salad
Salad with lentils and feta cheese is a tasty, healthy and nutritious dish suitable for a vegetarian table, the part of it that does not reject dairy products. Vegetarians can replace feta cheese with tofu cheese, it will also turn out delicious. With tofu, the recipe can be added to the lean menu. Legumes and cheese are important sources of protein, which is well absorbed by our body; meat is not needed with such products!
A variety of dishes are prepared from lentils, it is tasty in soup, stew, but in salads it is simply incomparable. For this, brown varieties of bean "queen" are better suited - they do not boil during cooking, grains remain whole and elastic after dressing with acidic sauce. But, unlike red, which takes about 15 minutes to cook, green and brown will have to be cooked for almost an hour, but you will be rewarded with the incomparable nutty flavor characteristic of these varieties.

Lentil and Brynza Salad Ingredients
- 160 g of green lentils;
- 200 g of fresh salad;
- 150 g carrots;
- 100 g onions;
- 4 cloves of garlic;
- 150 g of red tomatoes;
- 130 g of feta cheese;
- 30 ml extra virgin olive oil;
- 30 g of white sesame;
- salt, ground paprika, black pepper, vegetable little for frying.
A method of preparing a salad with lentils and feta cheese
We put the leaves of green lettuce in a deep bowl filled with cold water, after a few minutes put them in a colander, wash them under the tap, dry them on a towel or in a special centrifuge. Shred the leaves with wide stripes (about 2-3 centimeters).
Boil the lentils and leave it to cool so that, mixed with greens, it does not turn the latter into an unappetizing mess. So, we sort, wash, fill with cold water (for 150 g of grains we take 300 ml of water), cook for 45 minutes. Salt 10 minutes before readiness.
We recline in a colander so that the excess water glass, we send the cooled lentils to the salad bowl.
Cut the carrots into cubes, chop the onion finely, cut the cloves of garlic into slices. We heat the pan, pour a tablespoon of vegetable oil, fry the vegetables until the onions become transparent. When the passer cools down, add to the salad bowl.
Ripe, red and meaty tomatoes are cut into large cubes, add to the rest of the ingredients.
Season vegetables with ground red pepper, black pepper and salt, mix. You can add any ground spices that you like to taste - coriander, zira, mustard.
Now pour the extra virgin olive oil. You always need to season vegetables in this order - first salt and spices, and then oil.
We cut the feta cheese into cubes with an edge one centimeter. Put a serving of salad on a plate, sprinkle with cheese. If you put cheese in a salad bowl and mix, it will crawl, you will get unappetizing slices, so it’s better to add it before serving right on the plate.
Fry sesame seeds until golden in a dry frying pan with a thick bottom. Sprinkle a salad with lentils and feta cheese with golden sesame seeds, black pepper and immediately serve. Enjoy your meal!
