Golden yellow inside, moderately sweet, slightly moist, with pieces of dried fruit and sour cream, it is eaten to the crumbs as soon as it appears on the table.
Any dried fruits and candied fruits are suitable for decoration and filling - figs, dried apricots, dates, in general, show imagination, and at the same time clean your kitchen warehouse. It is no secret that in the kitchen cabinet there are always jars with a handful of raisins or dried cranberries - you can add anything to this baking dish.

Ingredients for Pumpkin Pie on Kefir with Dried Fruits
- 300 g pumpkin;
- 130 ml of kefir;
- 60 g butter;
- 130 g of granulated sugar;
- 2 chicken eggs;
- 100 g of cornmeal;
- 150 g of wheat flour;
- 1 teaspoon of baking powder;
- 1/3 teaspoon of baking soda;
- 100 g dried apricots;
- 100 g of dates;
- 1 3 nutmeg;
For pumpkin pie cream:
- 200 g of fat sour cream;
- 50 g of granulated sugar;
- 30 g dried apricots;
- ground cinnamon.
The method of preparation of pumpkin pie on kefir with dried fruits
We cut the pumpkin into pieces, select the ripest piece, remove the seeds, seed bag, cut the peel.
For sweet pastries, I advise you to use nutmeg pumpkin. There are even sugary sweet vegetables, and this is the best choice.
Dice the flesh. Then we cook in any way convenient for you: we steam, in a microwave oven or bake in the oven. Before baking vegetables in the oven, pour them with olive or vegetable oil.
The pulp of nutmeg pumpkin will be ready in about 10-15 minutes of heat treatment.
Slightly cooled vegetables are placed in a blender, add granulated sugar, break the chicken eggs, sprinkle 1/3 teaspoon of small table salt.
Pour kefir, beat the mass for several minutes, so that the granulated sugar is completely dissolved.
Mix the dry ingredients - pour corn and wheat flour, baking soda, baking powder into a bowl.
Gradually add liquid to the dry ingredients, knead the dough. Melt the butter, and when it cools down a bit, add to the bowl. Knead the dough so that it is free of lumps.
Dice the dried apricots and dates into cubes or thin strips.
Add dried fruits to the dough, mix well. If desired, you can soak dried fruits in cognac about an hour before baking.
We rub finely nutmeg, for our pie it needs very little, you can not overdo it with this spice.
We grease the form with butter, sprinkle with wheat flour, spread the dough.
We heat the oven to a temperature of 175 degrees Celsius, set the form to an average level, and prepare a cake for 40 minutes. We take out the finished baking from the mold, cool on a wire rack.
Mix fat sour cream with sugar. Generously cover the top with a thick sour cream, sprinkle with finely chopped dried apricots and ground cinnamon.
Pumpkin pie with dried fruits can be served immediately, but if the pie stands for an hour and is saturated with sour cream, it will only taste better.
