Healthy broccoli salad with pepper

Salad without oil, however, if the diet and figure allow, then you can taste the finished dish with high-quality olive oil, it will be tastier. For a variety of textures, it’s nice for our tongue and palate to feel tender baked vegetables, cream sauce and crispy seeds, I sprinkle the prepared salad with sesame seeds, it can be replaced with pumpkin seeds or sunflower seeds, anyone who likes it.

Pepper Broccoli Salad Ingredients
- 300 g broccoli;
- 1 red bell pepper;
- ⅓ lemon;
- several leaves of fresh salad;
- a small bunch of fresh herbs (parsley, dill, spring onions);
- 200 g of cottage cheese fat content of 2%;
- 40 g fat-free unsweetened yogurt;
- black and white sesame;
- ground sweet paprika, sea salt, crisps or whole grain bread crisps for serving.
Method for preparing healthy broccoli salad with pepper
Both fresh and frozen vegetables are suitable for making broccoli salad with pepper. Frozen cabbage should be removed from the freezer for 30 minutes - 1 hour before cooking and left at room temperature.
We break broccoli into inflorescences, the smaller the inflorescences, the shorter the heat treatment time, and, therefore, more vitamins will remain in the cabbage.
Pour about 1 liter of water into a wide and shallow pan, bring to a boil. We put broccoli inflorescences in boiling water, blanch for 2-3 minutes, remove it with a slotted spoon, put it on a board or put the inflorescences on a colander.
Fleshy, red bell peppers, wash thoroughly, prick with a knife, put on foil and send into the oven heated to 200 degrees for about 10-12 minutes.
Baked peppers can be peeled, for this we place the pod in a bag, leave it for 5 minutes, then remove the peel with a knife, cut the pepper in half, remove the seeds. Cut the flesh into narrow, long slices.
Put blanched broccoli and strips of pepper in a bowl. This salad can be served warm, so it is not necessary to wait until the vegetables have cooled.
Squeeze the juice from the lemon on vegetables, sprinkle with a pinch of sea salt, mix gently.
Making broccoli and pepper sauce. Finely chop a bunch of fresh herbs - dill, parsley, green onions. In a deep bowl, put soft cottage cheese without lumps, add chopped greens, ground sweet paprika and sea salt to taste.
Add fat-free unsweetened yogurt to the sauce, mix thoroughly.
On a plate, lay out a portion of the sauce, on top a few leaves of fresh salad.
Then put a portion of seasoned vegetables, sprinkle with black and white sesame seeds.
Immediately serve broccoli salad with pepper on the table. In such a sauce, it is very tasty to dip chips or whole-wheat bread loaves, so they will be welcome.
