Tomato and cucumber salad for the winter is the most delicious and simple recipe, according to which it is easy to prepare your favorite vegetables. In winter, it is so nice to open homemade preserves, they are full of vitamins and smell in summer. Various types of vegetable salads are harvested on an industrial scale, this is a hunting salad, and Don, and Kuban, and many, many others. There is a lot of vinegar in such blanks, and it’s understandable - preservation must be ensured. In addition to a lot of vinegar, there are also various food additives, with indices incomprehensible to an ordinary person.
In winter’s home-made salad, everything is different - the hostess regulates the acid, she also monitors sterility and pasteurization, therefore such preparations are incredibly popular among friends and relatives at the holiday table.

Ingredients for Tomato and Cucumber Salad for Winter
- 1 kg of tomatoes;
- 1 kg of cucumbers;
- 0.5 kg of bell pepper;
- 0.5 kg of blue Crimean onion;
- 40 g of dill;
- 5 teaspoons of coarse salt;
- 7 teaspoons of granulated sugar;
- 1 teaspoon of sweet paprika;
- 1 teaspoon of spices for vegetable salad;
- 1/2 teaspoon red pepper;
- 1 tablespoon of balsamic vinegar;
- 2 tablespoons of apple cider vinegar;
- 100 ml of olive oil.

I thoroughly wash red, slightly unripe tomatoes, cut in half, cut the stem, cut the tomatoes into four parts. Vegetables should be dense, it is better to take a little unripe, as very ripe can turn into mashed potatoes.
Put chopped tomatoes in a large pot with a thick bottom.
We clean the red Crimean onion, cut the onion into large feathers, dismantle the feathers into segments, add to the pan.
I carefully wash the cucumbers, cut the tails, cut the cucumbers into circles about half a centimeter thick, put the chopped cucumbers in a pan.
Pods of sweet bell pepper are cut in half, remove the seeds, cut the flesh into strips about a centimeter wide.
Add chopped pepper to the rest of the ingredients.
Young dill chop finely.
Sprinkle vegetables with salt. Usually, coarse salt with no additives is used for preforms.
Next, add granulated sugar, ground sweet paprika, red pepper, a mixture of dry spices for vegetables.
Pour wine and balsamic vinegar.
Thoroughly mix the vegetables with spices so that salt and sugar begin to draw juice from them.
We put a clean plate on the vegetables, load on top, leave for 2 hours at room temperature, so the process of juice allocation will go faster.
We remove the plate, put the pan on the stove, stirring quickly, heat until the juice that has boiled out boils, add olive or vegetable oil, warm for another 5-7 minutes.
We put vegetables in dry sterilized jars.
We twist the jars, put on a towel in a container for pasteurization, pour hot water. We pasteurize containers with a capacity of 500 ml for 20 minutes at a temperature of 85 degrees.
Tightly twist, turn upside down.
After cooling, we remove the salad of tomatoes and cucumbers for the winter in a cold cellar.
