Cheesecakes with poppy seeds and raisins - a taste of childhood
Lush cottage cheese pancakes with poppy seeds and raisins, prepared according to this recipe, are eaten in the blink of an eye in my family, even on the way from the pan to the plate. To the best of sweet, plump, tender, with a delicious crust, without excess oil, in a word, exactly the same as my mother or grandmother fried in childhood. If the raisins are very sweet, then granulated sugar can not be added at all, without sugar, cheese cakes are better toasted and will never burn. Cook them in a well-heated skillet, oiled, over low heat and without a lid!
A sweet fruit chutney with pumpkin, ginger and orange is suitable for this dish - very tasty!

The method of preparation of cheesecakes with poppy seeds and raisins
First, brew a poppy. We rinse poppy seeds with cold water, pour into a saucepan, pour milk or cream, pour sugar. We put the stewpan on the stove, bring the mixture to a boil, evaporate on low heat for about 7 minutes. The mass should become thick, viscous.
Brew poppy seeds to room temperature.
Knead in a bowl fat cottage cheese for cheesecakes, if there are grains, then it is worth rubbing the cottage cheese through a fine sieve or pass through a meat grinder with a small nozzle.
Add fresh large chicken egg and a pinch of salt to the curd. Rub the egg with cottage cheese until smooth.
Pour semolina, mix, so that semolina begins to absorb moisture from the curd mass.
Then add the brewed poppy and a bag of vanilla sugar, mix the products.
Instead of vanilla sugar, you can take vanilla extract or vanillin on the tip of a knife.
Pour dark seedless raisins with boiling water, leave for 5 minutes, drain the water, discard the raisins in a colander, rinse thoroughly, and then dry on a paper towel.
We add scalded and dried raisins to the rest of the cottage cheese ingredients.
Mix the products thoroughly so that the poppy and raisins are evenly distributed throughout the cheese dough test.
On a chopping board, pour a few tablespoons of wheat flour.
Scoop the dough with a dessert spoon, put in flour on the board, roll the balls. We dust our hands with flour so that the dough does not stick.
Lubricate the pan with vegetable oil, put the curd balls, gently press it with a flat spatula.
Fry cheesecakes until golden brown on each side over low heat.
It will take about 6-7 minutes to fry.
