Open pie with chicken and potatoes under a cheese crust
We recommend a fairly easy recipe for a pie with a delicious filling of chicken and potatoes. An open pie with chicken and potatoes is an excellent hearty dish, which is suitable for a hearty snack. It’s very convenient to take a couple of pieces of this pastry on the road. Such an open pie can be prepared as an additional dish for dinner, and in the morning the leftovers can be reheated in the microwave and have a delicious breakfast.
Ingredients for an open pie with chicken and potatoes
- 2 tbsp. flour;
- 3 chicken eggs;
- 1 2 tsp. salts;
- 200 ml of sour cream;
- 1 part baking powder;
- 300 g chicken;
- 3 potatoes;
- 1 onion;
- 100 g butter;
- 120 g of hard cheese.

We prepare the products for the pie: peel the potatoes, onion, rinse the chicken pulp. Melt a piece of butter and pour it into a bowl.
We spread all the sour cream to it. Using a spatula, mix the ingredients slightly.
Drive one (out of three) eggs and mix again.
Sift the flour to the mixture simultaneously with the baking powder. Solim.
As a result of active kneading with our hands, we got an incredibly soft pie dough in structure, absolutely not sticking to our fingers.
We cover the bottom with a convenient shape (we have a fairly standard size - 21 cm in diameter) with a piece of high-quality food parchment. We transfer to the prepared form a layer of dough (commensurate with the diameter of the bottom), which we rolled out a little earlier with a rolling pin from the prepared dough.
We form the frame for the future open chicken pie, not forgetting that the sides should be about 4-5 cm high. We fork with the fork the horizontal part of the frame: if this is not done, then the finished baked goods will most likely become deformed during exposure to high oven temperatures.
Cut the fillets into small pieces, put in a bowl and salt.
There we have a finely chopped onion.
Potatoes, crushed on a large canvas, are also added to the ingredients. Drive in two eggs. Actively mix the contents of the bowl with a spoon.
We spread the chicken and potato pie filling on the dough frame. Leveling.
The final touch in the preparation will be the cheese layer: we grate the cheese coarsely, distribute it evenly over the filling. We put the formed workpiece in a cold oven, turn on the heat, set the regulator at around 180 degrees.
Exactly an hour later we take out a ready-made open pie with chicken and potatoes, put it on a wooden surface, having previously released it from the mold.
It is enough to cool the cake slightly and you can start tasting. Enjoy your meal!
